Primal Pork Braised in Guinness

Primal Blueprint has given me so many great ideas about style of eating as well as lifestyle in general that I wanted to share another recipe inspired by the writing of Mark Sisson.

Guinness Braised Pork Loin Roast

Pre heat oven to 350 degrees

Ingredients

  • 4-5 lb pork loin roast, with fat cap intact, preferably pastured
  • 3 medium onions, chopped
  • 5 carrots, pared and diced
  • 12 oz of Guinness Stout
  • 2 tsps sea salt
  • 1/4 tsp fresh ground black pepper
  • 1 bay leaf
  • 4 whole cloves

Insturctions:

  1. Brown roast in coconut oil in dutch oven. Keep rotating until meat is well browned. Remove and set aside.
  2. Saute onion and carrots until softened.
  3. Stir in beer, salt, pepper, bay leaf and clove.
  4. Place roast on top of this mixture and cover.
  5. Bake at 350 for 1 hour and then turn over.
  6. Remove meat from cooking liquid. Tent with foil on platter and let rest for 10 minutes.
  7. Meanwhile, remove bay leaf and then pour liquid carefully into food processor. Remember this juice is hot and you must handle with care in order to remain burn free. Blend at low speed until it is smooth.
  8. Pour blended sauce back into dutch oven and bring to boil. Change heat to low and simmer, stirring often, for 5 minutes until thickened.
  9. Slice roast to desired thickness and sauce the meat.
  10. Enjoy!
